Dehydration is the purest known method of food preservation. It uses no additives – no sugars, no salts, no artificial preservatives. The preservation is based solely on the method itself: drying. The clean line of dehydration starts with the ingredients. Most of the products to be dried can be harvested from nature or your own garden. Dehydration is nature's way of "preserving"; this is how seeds and grains remain viable. It is also humanity's oldest method of preservation. Completely viable grains more than 3000 years old have been found in pyramids.
In dehydrated foods, flavors are at their purest. After years of storage, they taste nearly as fresh due solely to the preservation method. During dehydration, the natural aromas of the ingredients are intensified, and these flavors persist well in dehydrated foods. Thus, meals made from dried ingredients have a rich taste; there's no need to artificially enhance the food's flavors with excessive salt. Vitamins in dried vegetables, fruits, roots, and herbs remain stable, providing good nutritional value. A healthier outcome is achieved by using a fast and evenly heated drying method, minimising vitamin loss during drying.
Dehydration also saves you money. Ingredients are either free or can be purchased cheaply. You also save on energy; the electricity costs for drying are minimal – less than a euro per drying session. The Evermat dryer operates quickly and efficiently. Compared to traditional drying methods, it reduces drying time by a third. Energy consumption for drying is about half that of freezing. Moreover, storing dehydrated products does not require special, energy-consuming storage spaces.
Dehydration is suitable for preserving nearly all food items. You can dry mushrooms, soup vegetables, fruits, berries, herbs, and spices. Hard-fleshed mushrooms like porcini, boletes, and chanterelles are the best choice for drying. Other suitable mushrooms include summer chanterelle, black trumpet, and various species of trumpet mushrooms, along with greens like stinging nettle, which are ideal for drying to use in winter soups and stews. Apple, rose hip, carrot, swede, celery, and parsnip are also convenient when dried for food preparation.
In addition to the dryer, you only need standard kitchen tools. A sharp knife, potato peeler, sturdy cutting board, grater, or food mill are sufficient. You can slice, cut, grate, and chop with these tools. If you have a food processor and vegetable slicer, use those for slicing and grating vegetables and fruits. Some vegetables may require preliminary blanching; for that, you will need a large pot and vegetable steaming basket or colander. A mortar or blender is helpful if you wish to turn dried products into powder.
